"Escargots" is a French delicacy and means "edible snail". Escargots is a boiled snail grazing on land that is typically served as a starter in Italy, Spain, Portugal and France with lots of garlic and butter.
The delicacy Escargots is believed to date back to about 1892 and is closely related to the delicacy oysters. The old French term "Escargol" means "Provencal" and dates back to the ancient Greece, where it was used for "fruits of the land and sea", and for unknown reasons especially related to edible seafood and oysters.

The snail farm is located on land that has been grassland for horses for decades. Next to the farm is a protected marsh, which provides constant moisture to the farm. The snails need moisture to grow.

Free-range snails
We have chosen the word "free-range" because snails can both be bred indoors and free-range. Our snails are bred as close to their natural environment as possible. Water is added with sprinklers and the snails are fed with greens and a flour mixture added minerals. They are farmed organically, but the farm does not yet have the status of organic.

Animal welfare
The snails are raised under controlled conditions to prevent them from breaking out of the enclosure. The farm has many snails at 1000 sqm of land. Snails like to live close, just like insects. By clustering, they can help each other keeping a moist micro environment, preventing drying out un a hot summer day. Animal welfare is thought into the whole process from field to blanching.
