WHAT DO OUR CUSTOMERS SAY ABOUT SNAIL CAVIAR?
"A light taste of moss and forest floor"
​For the Danish Gastronomic Academy's annual dinner, I had the pleasure of orchestrating the menu for the Diploma recipients and the Academy's members. It was our vision to show some of the most interesting in gastronomy from techniques and tastes to innovation, new ideas and of course a lot of exciting food. One of the evening's very interesting experiences was the snail caviar from Nordic Snails, which has discovered a small "golden egg" - or closer to many. The beautiful, white caviar teases the senses with their firm bite, scent and the right, light taste of fresh moss and forest floor, which together with an incredibly exciting mouthfeel, gives a little trip to the taste heaven. I predict the small caviar from Helix Aspersa a great future in the field of gourmet culture!

​Restaurateur and owner Jeanette Dalsgaard from Rådhuskælderen in Roskilde has received a very good response to the Danish free-range snails from her regular customers. She says: Our guests, who have been eating snails with us for years, say that the snails are bigger, have a fantastic taste and a delicious consistency. We are so privileged to be able to offer these snails to our guests.

Chef Mark Lundgaard has escargots from Nordic Snails on the menu. Especially, they are prepared as starters when guests order a la carte. He says: "We are very happy to have fresh ingredients produced locally. The snails are meaty, tender and larger than others and we like to serve them as a snack with a good aperitif".
